1Preheat the oven to 425 degrees.

2Mix the baking powder , sugar , and salt with flour together.baking powder: 2 tbsp, sugar: 1 tsp, salt: 1/2 tbsp, flour: 2.5 c

If using salted butter, decrease salt to 1 tsp.

3Cube butter and work into dry ingredients with a food processor or pastry blender.butter: 1/2 c (cold unsalted)

4Add buttermilk and stir just until mixed. Dough may be sticky.buttermilk: 1 c (or kefir or soured milk)

5Turn the dough out onto a floured surface and roll it into a rough rectangle, about an inch thick. Fold it over and gently roll it down again. Repeat 6 times.

6Gently roll out the dough once more, so that it forms a rectangle. Cut dough into biscuits using a floured glass or biscuit cutter. Do not twist the cutter when cutting; this will crimp the edges of the biscuit causing it not to rise.

7Place biscuits in a baking sheet , dish, or skillet, making sure they are touching.

8Bake ⏱️ 10-15 minutes , until golden brown.
